Pruning
During winter we spend our days pruning the vineyards. We have about 14 acres of vines to get through and this takes us about 2 months.
Pruning can be a bit tedious and cold as our vineyard gets down to -10’C during the winter months. However after the ice melts the days are generally fine, and a bit cool.
Pruning is one of the most important jobs in the vineyard. The pruning level helps to determine the crop load and subsequent quality of the grapes and therefore wine. Standing alone in the vineyard pruning gives you plenty of time to reflect on the past vintages and to wonder what these wonderful grapevines will deliver during the coming season. Maybe another Gold winning wine!!!
Wines in Barrels
During winter we blend our previous reds and prepare these wines ready for bottling. The current wines are transferred to small French oak barrels for the maturation phase where they are kept at a constant temperature in our barrel room. The wines are carefully blended and matured for 12 months to soften and develop complexity.
These wines will also be ready for bottling at this time next year and then matured in bottle ready for sale.
